Amaranth with Pork
Ingredients:
400 g amaranth
450 g pork
1 white onion
1 clove of garlic minced
Butter or oil to taste
Preparation:
Toast the amaranth and cook it in 6 cups of water. Clean the pork and cook it with a cup of water and salt until it browns. Fry the garlic and the onion, add the amaranth and the pork rind so they cook together for 10 minutes. You may add some cooked potatoes.
