Amaranth Punch

Ingredients:

200 g amaranth toasted and minced
400 cc milk
4 eggs
1 tablespoon vanilla
300 g sugar

Preparation: 

Boil the milk with the amaranth, beat the egg whites to form peaks.

Add the yolks, the vanilla, the sugar and keep on beating.

Pour the mixture in a pan moving constantly. Serve with a bit of ground cinnamon.
