Amaranth Blancmange with Coconut
Ingredients:
100 g amaranth
400 g white sugar
400 cc milk
1 tablespoon vanilla
100 g grated coconut
1 liter water
Clove, cinnamon, nutmeg to taste
Preparation:
Boil the amaranth in 1 liter of water with cinnamon, the clove and the nutmeg for an hour.
Pass through sieve the amaranth already cooked, and put it in a pan with the sugar, the vanilla and the milk.
Let it boil until it takes the point. Once cold, serve sprinkled with coconut.
